Goji Berry Granola

3 cups gluten-free rolled oats
½ cup sliced almonds
2 tbsps sunflower seeds
2 tbsps pumpkin seeds
½ cup goji berries
½ cup dried mulberries
½ cup coconut palm sugar
¼ cup melted coconut oil
1 tbsp cinnamon
1 tbsp vanilla extract or powder
1 tsp fine Himalayan or sea salt


  1. Preheat oven to 150°C (300°F).
  2. Combine all ingredients in large bowl and mix thoroughly.
  3. Spread out in an even, ½-inch layer on a baking sheet and transfer to oven.
  4. Bake for 15 minutes, then stir, then return to oven for 10 minutes, then stir and return to oven again. Continue stirring every 10 minutes until granola is golden brown.
  5. Remove from oven when golden, be careful, it is easy to let it burn!
  6. Allow to cool for 15 minutes and store in a large glass jar and serve with coconut milk or yogurt and fresh berries.


This makes a handy portable snack too!
