Thai Quinoa

4 servings


1 cup dry quinoa
2/3 cup coconut milk
1 cup water
A pinch of sea salt
1 stalk of lemongrass, tough outer leaves removed and tender middle very finely sliced
3cm piece of fresh ginger, grated
2 cloves garlic, crushed
1/2-1 red or green chilli, chopped finely
1/2 red pepper, finely diced
Handful chopped coriander


  1. Rinse quinoa in a fine mesh sieve.
  2. Bring coconut milk and water to a boil.
  3. Add quinoa, salt, lemongrass, ginger and garlic.
  4. Bring back to a boil, cover, and reduce heat.
  5. Cook for 12-15 minutes or until the liquid is absorbed.
  6. Remove from heat and stir in red peppers, chilli and coriander.
  7. Let sit covered for 5 minutes then serve.


This is nice served with stir fried garlicky greens and mushrooms.
